Have you tried cooking this classic during lockdown?



Coronavirus restrictions have left many of us looking for new ways to keep ourselves entertained at home.


Cooking and baking is something lots of people have turned too, creating from the simplest to the most sophisticated dishes. And most agree, it has been both great fun and therapuetic.

Here's a favourite of ours from the last nine months:


Onion gravy sausage with farmers mash


This great take on the traditional favourite bangers and mash - made entirely without cooking oil - is bound to delight young, old and the waistline. It's also simple to make in 25-30 mins.


Ingredients (serves 4-6):

1 kg new potatoes (with skins)

12 thick link sausages

1 Onion

500 ml gravy (granules is fine)

100g rocket


Method:

Wash and cut potatoes into halves or quarters depending on size of each (leave skin on/do not peel).

Boil potatoes in slightly salted water for approx 25 mins and test with knife to check they are medium soft.

Drain and cover with a tea towel or muslin cloth for 10 mins.

Mash potatoes with skins on (add in 75g butter if seeking added flavour).


Peel and chop onion into rings and fry in shallow water along with 2 table spoons of brown sugare until soft and golden brown.


Grill sausages on medium high heat (approx 15-20 mins at 275c) until darkish brown.


Mix required quantity of gravy granules with 500ml just boiled water in a 1litre jug, then add the cooked onions.


Serve:

Plate up the farmers mash portions followed by 2/3 sausages on top, then pour over the onion gravy and garnish with a few sprigs of rocket.
